Ingredients: • 2 pieces pork feet, cleaned • 1 cup mung beans (munggo) • 1 tablespoon olive oil • ¼ cup ginger, julienned • 1 onion, julienned • 1 bulb garlic, chopped • 2 tablespoons tomato paste • 1 pork bouillon cube • 1 cup chicharon (pork cracklings)200g spinachSalt to taste • 1 tbsp salt (for porks feet pressure cook) • Instructions: • 1. Prepare the Pork Feet: • •Place the pork feet in a pressure cooker, add salt, and cook for 41 minutes. • •Safely remove the lid and take out the pork feet, setting them aside. • •Reserve the cooking liquid for later use. • 2. Cook the Mung Beans: • •In a wok, add the mung beans and enough water to cover them. • •Boil for 30 minutes or until the mung beans are tender, stirring occasionally. • •Add more water if necessary. • •Once cooked, set the mung beans aside. • 3. Sauté the Aromatics: • •In a frying pan, heat the olive oil over medium heat. • •Sauté the julienned ginger, julienned onion, and chopped garlic until the onion becomes translucent. • •Season with salt to taste. • 4. Combine Ingredients: • •Add the tomato paste to the sautéed aromatics and stir well. • •Pour in the reserved cooking liquid from the pork feet and add the pork bouillon cube. • •Stir to combine. • •Let it simmer for a few minutes to blend the flavors. • 5.
