Tempeh Mushroom Bolognese 🍝 😍 • Easy, healthy and most importantly, TASTY (swoon!). • vegan recipes • Ingredients: • 1 packet 8 oz tempeh, processed in a food processor or grated • Extra virgin olive oil spray • 1/2 an onion, chopped • 4 garlic cloves, minced • 1 cup chopped mushrooms (shiitake or any other type) • 3 tbsp tomato paste • 1 15 oz can tomato sauce • Freshly ground black pepper • A pinch of salt • 1 tbsp dried oregano • 2 tbsp Monk fruit sweetener (or any other low calorie sweetener, to balance the bitterness from tempeh) • 1 tbsp liquid aminos (or Worcestershire sauce, for that “depth”) • 1/2 - 1 tsp crushed red pepper • -2 sprigs of thyme leaves • 1/2 cup of water (not shown) added after everything is mixed to help with the cooking process • More black pepper to taste • Serve with chickpea pasta @eatbanza or over spaghetti squash; add some broccoli and top of with walnut Parmesan and crushed red pepper.
