Agar has been used as an ingredient in desserts throughout Asia. It is a natural vegetable gelatin counterpart. It is white and semi-translucent when sold in packages as washed and dried strips or in powdered form. China grass can be used to make jellies, puddings, and custards.. When making jelly, it is boiled in water until the solids dissolve. Cashew seeds • 2. Raisins • 3. One cup of water • 4. One liter of milk • 5. 150gms of sugar • 6. Food color and • 7. One packet of China grass • Method: • Rinse the china grass / agar agar strands to get rid of any dirt and then soak it for about 10-15 min with one cup of cooking water. • Boil about one liter of milk on a low flame. It will reduce to around 700-600ml. Meanwhile, cook the china grass till it gets dissolved. • Add sugar, and as it boils, the milk has to be stirred continuously for about 5 mins. • Add a pinch of food color of your choice. • Pour the mixture into a container and allow it to gel at room temperature. Once it's formed you can top it with some dry fruits. Chill it in the fridge for about an hour and then cut it into squares.
