Easy Fried Okra Curry / Indian Bhindi Curry (Fiji Style) • Ingredients: • • 500g thinly sliced Okra/Bhindi • • 1 medium onion chopped • • ½ cumin seeds • • ½ mustard seeds • • 1 small chilli • • 2 sprigs curry leaves • • 2 tbsp grated garlic • • ¼ cup Oil • • Salt to taste • • 1 tbsp Lemon juice • Method: • 1. Put a non-stick fry pan on medium heat • 2. Add ¼ cup of oil, heat for 30 seconds and add cumin and mustard seeds • 3. When the seeds start to sizzle add your onions, curry leaves, chilli and garlic • 4. Give a quick mix and cook until light golden • 5. Add bhindi and salt to taste and give it a quick mix • 6. Cook it for 10 minutes with the lid on, stirring twice during cooking • 7. Give it a good mix and taste your salt again • 8. Add lemon juice, give it a good mix and taste your salt • 9.
