Aracha Kozhambu Recipe. • Ingredients : • For Tamarind Pulp - • Tamarind - Lemon-sized portion (2 tbsp) • Hot Water - 1 Cup • For the Dal - • Toor Dal - ¼ Cup • Water - 1 ½ Cups • Turmeric Powder - ¼ tsp • For Masala - • Coconut Oil - 1 tsp • Chana Dal - 1 tbsp • Urad Dal - 2 tsp • Coriander Seeds - 2 tbsp • Black Peppercorn - ½ tsp • Fenugreek Seeds - ¼ tsp • Dry Round Chilli/Gundu Chilli - 3 nos • Dry Kashmiri Chill - 2 nos • Cumin - ¾ tsp • Diced Coconut - ½ Cup • Shallots - 3 nos • Other Ingredients - • Coconut Oil - 1 tbsp • Mustard Seeds - ¼ tsp • Fenugreek Seeds - ¼ tsp • Curry Leaves - 2 sprigs • Shallots - 10 nos • Rock Salt - 2 tsp • Turmeric Powder - ½ tsp • To finish - • Coconut Oil - 1 tbsp • Curry Leaves - 1 Sprig • Instructions: • 1. To extract the tamarind pulp, add the tamarind to some hot water and set aside for at least 20 minutes. • 2. Take Toor dal in a bowl. Wash it well until the water runs clear. • 3. Drain the dal and add it to a pressure cooker along with water and turmeric powder. Cook it on medium heat for 15 minutes or around 4 whistles. Set this aside. • Sambar Masala • 1. For the masala, heat coconut oil in a pan and add the chana dal and urad dal. Roast until it starts to turn golden. • 2. Add coriander seeds, black peppercorns, fenugreek seeds, dry red chilli Kashmiri chilli. Roast on low heat until aromatic and the chilli starts to turn crisp. • 3. Turn off the heat and then add the cumin seeds. • 4. Allow it to cool down, then transfer it to a blender and grind into a fine powder. • 5. Add the diced coconut and shallots, then grind into a fine paste. • Cooking the Sambar • 1. In a pan, heat coconut oil and crackle the mustard seeds. Then add fenugreek seeds, curry leaves, shallots and saute well until softened. • 2. Add the tamarind pulp, salt and turmeric powder. Allow it to cook for 6-7 minutes. • 3. Add the coconut paste and the boiled dal. Let it cook for 10 minutes. Adjust the consistency, if required. • 4. Add some coconut oil and fresh curry leaves on top.
