We Hungarians, I should really say mostly my family, do not eat much raw or many side dish vegetables. We usually prepare it as a thick vegetable side or main dish, thickened with “Roux” by way of above, that was made authentically with lard and flour (now with oil or butter) and sometimes topped with sour cream. Served with hamburgers or smoked meats. My family really loves it with my meatloaf type hamburgers and mashed potatoes which you must try! Give the potato water you throw down the drain a try for a quick, easy, delicious and healthy soup. • This is a quick and easy, deliciously simple side dish to use with burgers, meatloaf or smoked meats. Once you try, I know you will love it and will make it often and more than a small amount at a time. • As an update, I have to let you know, as change comes to all of us, I've have come to enjoy many different vegetable each and every day. Many times I wonder how I've survived without it. • In todays' recipe, I'm showing you this wonderful Creamy Wax Bean recipe prepared from a can because, I am using the canned type more often than the fresh. I have found beans or other like vegetables and some fruits tend to smell and taste mildewed from grocery stores during the colder months. (This is 5th of October and I had a Honey Crisp apple from a reputable store and the taste of mildew is still in my mouth after an hour of eating it). I believe it is from where they are kept, piled somewhere damp, before they're put on store shelves. If you don’t believe me, pick some up, don't need to put them right to your nose (since it would be unhealthy to other people) take a quick whiff of them and you will see. That is why I switch back and forth during the cold and warm months from fresh to cans. • If made from fresh beans, the only difference you will find in the recipe will be that you have to prepare the wax beans. There is not much to it. • You will need about 25 wax beans, rinse them well under cold running water, remove tips from stem ends and cut them to one and a half inch lengths. Put them in a saucepan and completely cover them with cold water. Then, just follow the rest of the directions of my “Hungarian Creamy Wax Beans” recipe. Simple. • Ingredients: • 1 can 398 mL 14 Fl oz. cut wax beans • 1/4 cup cold water (just enough to cover beans) • 2 tsp. white vinegar • 1/4 tsp. salt • Directions: • If using a canned, discard a quarter of the liquid from the can and pour the wax beans into a saucepan. • Add water, vinegar and salt. Turn burner to medium heat and cook until it comes to a boil. • • Roux Preparation: • In a small frying pan over medium heat, warm oil, when hot, add flour. • Stir quickly and constantly until the flour starts to turn color, once it does, remove from heat, but keep stirring to get a nice golden-brown color. The pan is hot enough it does not need to be on burner for long before it turns color. If you keep it too long it will scorch or burn. • (DO NOT put in the wax beans if that would be the case. It wouldn't be that costly and time-consuming to make a new batch. After a couple of times, you will get the hang of it and be just like a pro). • Finishing the Wax Beans. • The wax bean should have boiled on medium heat by the time the roux is made and can now be added spoon by spoon into the wax bean. The mix should not be runny or too thick. The beans should be served hot, if not served immediately, it will thicken a bit. If it does, use a tablespoon to add a bit of cold water one spoon at a time, until it's at the desired consistency. Which is between thick and thick. Should be a bit runny, just a bit from a spoon.
