What's it like eating at Alinea, Chef Grant Achatz's Three Michelin star restaurant in Chicago. We review our experience dining at The Salon at Alinea. There are typically three main components: social, artistic, and technical. So what can you expect in terms of the actual courses? The best thing to do is to expect nothing at all and let the courses reveal themselves. • The first and only other time I encountered molecular gastronomy was at Wylie Dufresne's beloved and long gone WD~50. While that dining experience occurred long before I knew anything about the restaurant industry, I'll never forget how visually engaging the entire meal was, and I've always craved a similar experience. Since molecular gastronomy is a term rarely uttered in the Seattle dining scene, dining at Alinea has long been a dream of mine throughout my (somewhat accidental) career as a restaurant photographer. • In my opinion, the best courses of the night were the ones that engaged multiple senses. The second course of asparagus served two ways was a great example. It consisted of asparagus served chilled with powered jamón and basil ferment, and warm asparagus topped with powered Marcona almond. This dish required multiple bites and each spoonful gave you an explosion of different flavors, textures, and sensations. In terms of engaging my full palate, it was wonderful and very memorable. • Another particularly memorable dish was the last savory course, dubbed Rossini: A5 Wagyu beef with foie gras puree, wood ear mushrooms, truffle, and pureed frites. This dish immediately sparked waves of nostalgia as it was an elevated version of our wedding dinner that we enjoyed at Osteria del Teatro in Tuscany not long ago. And it also presented frites in a highly untraditional form as a puree that indeed tasted like frites, even though it looked nothing of the sort. In a sense, it also made visual sense for the frites to be of equal proportion to the rest of the ingredients without overtaking the dish, as filler carbohydrates often do. • The final dish that was particularly outstanding was aptly named Nostalgia. Presented as a floating balloon filled with helium, you press your lips to break the surface and inhale. Your lungs fill with helium and you sound like a cartoon character for a few seconds, before consuming the rest of the balloon, which is green apple flavored. This was the most fun and engaging course of the evening that is reminiscent of childhood in every way. It is best experienced with a good friend, because who can't break into a genuine giggle when you hear your friend turn into a Chipmunk? • Overall, the evening was sublime, and I would do it again in a heartbeat.
