https://startasharpeningservice.com/ • In this video I demonstrate how to position your knife and set your angle in a Wicked Edge Pro-Pack II. It's important to note that all knives will be different, and you should treat all of your knives like they are unique. You can definitely re-profile your knives using this system, but I would caution against too much re-profiling as you can remove a significant amount of metal and permanently change the appearance of your knife. Instead, try to match the grind on your knife as best you can. • If your knife has a lot of curvature, like the Chris Reeves Small Inkosi that I sharpened in this video, the angle will change from one part of the bevel to another. That's OK. When using a Wicked Edge your stone will always contact the bevel the same way with each stroke, so even though there is a gradual angle change, you'll end up with a consistent looking bevel, and a small angle change like this will never be noticed when you're using the knife.
