🇮🇹🇮🇹🇮🇹 • Nel tempo ho provato e riprovato diversi impasti per realizzare una pizza in teglia che potesse soddisfarmi. Ho corretto dosi, cambiato tipo di farina, allungato i tempi di lievitazione, aumentato l'idratazione ecc... • Questa versione, con un impasto diretto, è decisamente quella che più mi soddisfa. • Alveolata, leggera e digeribile, croccante esternamente e super soffice all'interno. Pochissimo lievito, un'alta idratazione e lunga lievitazione. • Semplicissima se realizzata con la planetaria, ma altrettanto semplice da fare a mano. • 🇬🇧🇬🇧🇬🇧 • Over time I tried and tried different dough to make a pizza pan that could satisfy me.
