This is the best moist pumpkin bread ever! It's such an easy recipe. You'll love it. Enjoy this delicious pumpkin bread with a good cup of coffee! This easy recipe won't disappoint. I promise you'll love it! Make it for yourself or to give as a gift for the holidays! • • Ingredients: • 2 cups all-purpose flour • 1/2 tsp salt • 1 tsp baking soda • 1/2 tsp baking powder • 1 tsp ground cloves • 1 tsp ground cinnamon • 1 tsp ground nutmeg • 1 and 1/2 stick softened unsalted butter (3/4 cup) • 2 cups sugar • 3 eggs • 1/3 cup plain Greek yogurt • 15-oz 100% pure pumpkin puree (1 can) • Preheat oven at 350 degrees. Spray loaf pan with nonstick oil and line loaf pan with parchment paper. You'll need 2 loaf pans or you can make 1 loaf and the rest muffins like I did in my video. Spray muffin pan too. • In a medium bowl, combine all the dry ingredients (salt, baking soda, baking powder, ground cloves, ground cinnamon and ground nutmeg)and whisk together to combine and set aside. • In a large bowl, add in butter and sugar. Use a handheld mixer and beat the butter and sugar on medium-high speed. Add in eggs one at a time while mixing. Continue to beat mixture until light and fluffy.. this will take a few minutes. • Add in 1/3 cup of Greek yogurt and mix. Then add in the can of pumpkin and mix until combined. • Now add in the dry ingredients and fold into pumpkin mixture. Mix well, and pour half of the batter into the grease, parchment lined pan. Gently tap loaf pan to get air bubbles out. • Use ice cream scoop to scoop batter into the muffin pan. • Bake pumpkin loaf for 50 minutes and muffins for 35 minutes. • Let cool before cutting the loaf.
