Rich Creamy Farfalle Pasta 🍝 • Love Pasta? Then you can’t miss this BAKED FARFALLE PASTA. It is my absolute favourite dish to make for weeknight dinners. So creamy, rich and delicious! • Ingredients - • For the pasta sauce - • 500 grams Cherry Tomatoes • 1 Red Bell Pepper, chopped • 1 big Onion, chopped • 5-7 cloves Garlic • 2 tbsp EVOO • Salt, to taste • Pepper, to taste • Others - • 2 cups Farfalle Pasta, cooked al dente • 1 tsp EVOO, for greasing • 1/2 cup Mozzarella Cheese, grated • 1/2 cup mushroom, sliced and slightly roasted • Pepper, to taste • 2 tbsp Parmesan cheese • 1/4 cup Toasted bread crumbs • 6-8 Fresh Basil Leaves • Instructions - • Add cherry tomatoes, red bell pepper, onion and garlic on a baking tray. Pour some EVOO and sprinkle salt and pepper on top. Roast at 180 degree C for 20-30 minutes. (You can also stir fry it on a pan) • Let it cool down, add it to a blender and blend until smooth. • Meanwhile boil the pasta al dente and keep aside. • Now grease a deep baking dish, and add a layer of pasta. Add pasta sauce and mozzarella cheese on top. • Add one more layer of pasta and pasta sauce.
