Ingredients: • for the puff pastry • Flour - 500g • Butter - 250g • Egg • Vinegar 9% - 1 tbsp • Cold water - 100 ml • Salt • for the pastry cream • Cream 33% - 200 ml • Milk - 250 ml • Butter - 100g • Egg • Sugar 200g • Cornstarch - 1 tbsp • • Preparation: • • add flour into a large bowl; • • then grate butter into the same bowl and work it into the flour, until there are pea sized bits of butter throughout the dough; • • into a separate bowl add an egg, a bit of salt and vinegar and mix it all together. Then add around 100ml of water; • • and pour in the dough the liquid ingredients. Gently but quickly mix the dough, just until it comes together and becomes soft and pliable; • • wrap in plastic and chill for 1 to 2 hours to make it easier to roll out; • • now let’s make the pastry cream. In a bowl add an egg, sugar and cornstarch. Mix it all well; • • then add hot milk and mix it all together; • • pour this mixture into the saucepan and stir with a whisk until smooth; • • then add a butter and stir until it melts; • • remove from the heat and set aside to cool; • • then blend a cream until it becomes moussey; • • slightly whisk the cooled cream and add it to whipped cream. Our pastry cream is ready; • • now let’s go back to our cooled dough. Divide it into 6 pieces. And roll out each portion of dough into a very thin circle; • • then cut an even circle with a plate and pierce it with a fork; • • heat the oven to 375 F and bake each circle of pastry until golden brown. As a result I got 7 layers of pastry. And I crumbled one layer of dough to decorate the cake later; • • now let’s make a cake itself. Place one layer of the cooked dough in the bottom of the dish and pierce it a bit with a fork. It’s done for the dough to absorb the cream better; • • and cover evenly with a layer of cooled pastry cream. Continue to build up the cake in this way; • • in the end decorate the cake with crumbs from the dough; • • refrigerate for at least 6 hours – overnight is ideal. • Enjoy!
