Hi there Besties, welcome back to Sizzles Diaries. This is a continuation of my village life diary. Today I would like to demonstrate how we prepare the most fragrant virgin marula oil (Odjove) for cooking in many of our traditional Aawambo recipes. • Growing up here in Ongha found in Ohangwena region in North Central Namibia, marula trees are in abundance. Marula oil is a essential dietary and cosmetic commodity amongst my tribesmen. In the past marula oil was used for bartering and fostering good inter cultural relation during joyous celebrations. Marula oil processing and harvesting is exclusively done by women who either form groups or cooperatives within their communities. It is custom that every owambo woman should be able to produce marula oil, this forms a basis of indigenous knowledge Systems over generations. As of recent marula oil production is a source of income for many families. The skin from the marula fruit is dried and used as goat feed, according to cultural belief, the dried marula fruit skin can increase reproduction when consumed by goats. Given it's great benefit for skin, hair, earwax removal and well as overall health, marula oil is indeed one of the most preferred natural oils arround our house. • Extraction of marula oil from the kernel enclosed in a hard shell, takes month of patience and preparation. First the marula fruit needs to ripen and fall off the marula tree (sclerocarya birrea), then the fruit is gathered daily in piles under the marula tree. Women gather and painstakingly extract marula juice from its fruit using a goat/cow horn and a calabash. The skin is separated from the shell covered in a slimy pulp, this shell is then left in the sun to dry and packed for storage, ready to crack and remove the marula nut from the hard shell. The hard shells are used to start a fire during hard times (rainy season) when fire wood is scares. Depending on the helping hands available it takes approximately 2 to 4 days to extract about 3kg to 5kg of marula nuts which is enough to fill up a 2,5 litre bottle. So the next time you come across vendors selling marula oil at N$50 -100 per 200ml, just imagine the patience and stamina it takes to produce it. Marula oil is considered the elixsa of youth and health by my grandmother. • Ever wondered what happens to the marula juice exctracted? It is fermented over a period of not more than 4 days. The early stage of fermentation produces a sweet juice similar to ale in taste, this is called Oshinua and is mostly consumed by children.
