Today I share with you a true labor of love. A St Honore is a dessert which celebrates the patron saint of pastry chefs. It has layers of puff pastry, cream puffs, cream chiboust, pastry cream, and a cream Chantilly (whipped cream). This is dessert requires a lot of patience, and being able to master all the pastry fundamentals like laminating dough and piping skills. I only make it for special people on special occasions because of how long it takes.
