Slightly larger or smaller pan will work, but crust will be thicker or thinner. • Bakers Percent • Water – 79% • Sugar – 2.5% • Salt – 2% • Instant Dry Yeast – 1 % • Ingredients • Flour – 450 g • Water – 355 g • Salt – 9 g or ½ tbsp • Sugar – 11.25 g or 1 tbsp • Instant Dry Yeast – 4.5 g or ½ tbsp • Directions • 1. Add yeast, salt and sugar to warm water (approximately 95-100 degrees) and stir until yeast is dissolved. • 2. Slowly stir in flour until fully incorporated (about 5 minutes) • 3. Cover and let rest at room temperature for a minimum of 1 hour (may be up to 4) • 4. Alternatively, you can refrigerate the dough for 3 days • 5. Oil 12 x 12 inch baking pan and dump dough out onto it • 6. Spread dough gently until you have the pan covered (10 minute rest cycles may be required) • 7. Cover the pan and let rest for another hour • 8. Top with sauce, covering all the way to the edge • 9. Add your choice of ingredients and bake for 20 minutes on oven’s lowest rack at 500 degrees
