These are the HEALTHIEST and most delicious no bake cake pops ever! Don't take my word for it- take the kids word! These come together in one bowl and only take about 15 minutes to form the dough and roll into balls. I tested out a few different types of flour and almond flour was the clear winner here. They are soft and chewy and SO yummy. They're vegan and easily gluten free. Perfect to bring to a birthday party or just to have in the house as a healthier after dinner treat. I highly recommend using 1/2 cup of almond flour- it gives it a nice soft chewy texture and the almonds add a lot of flavor to the cake pop • Pinch of salt • 1 tsp vanilla extract • 1/3 cup of maple syrup • 1/8 cup of melted coconut oil • Frosting: • In two sepearte cups or bowls, melt white chocolate and dark chocolate chips in the microwave at 30 second increments (you can use anywhere between ½-1 cup so that the balls are “dunkable”). I used dairy free mini chips. Stir as you go and careful not to burn them! • For a simple glaze, use powdered sugar (start with ½ cup) and a few drops of oat milk. Add more as needed. Top with fun sprinkels! • Directions: • Mix all ingredients together until just incorporated. You can add a tablespoon of water at a time if the dough does not come together. Roll into balls. Dunk in the glaze or frosting and let them firm up in the refrigerator for about 15 minutes. Take them out of the refrigerator for about 15 minutes before consuming so they are soft and chewy. • *Tip: Tip: Stick the cake pop stick into the frosting before you stick it in the cake pop.
