Wagyu Steak amp Fries with Bearnaise Sauce

Recipe: • For the Bearnaise Sauce: • Combine 1 sliced shallot, 5g of black peppercorn, 1 sprig of tarragon, 50ml of white wine and 50ml of white wine vinegar in a small saucepan. Place over medium heat and simmer until there’s only 2 tbsp of liquid remaining. Strain. • To a bowl, add 2 egg yolks, 1 tbsp of water and 2 tbsp of the reduction. Whisk to combine. Place over bain-marie and keep whisking until the mixture thickens. Remove from heat and add 200g of melted butter (warm not hot) slowly while whisking constantly. Add chopped chives and tarragon. Season with salt, pepper and lemon juice. Keep warm. • For the Fries: • I fried first at 330F. The second fry was at 380F • For the Steak: • I cooked it at 128F (sous-vide, in a water bath).
