RECIPE BELOW⬇️ • (Deutsch in den kommentaren) • Cut • -1 eggplant into cubes, season with • -1 tsp salt • And set aside • To a Pot add • -2 tbsp olive oil • -1/2 onion (chopped) • And sauté until translucent. • Add • -1 cup vegetable broth • -2 cups water • -2 tbsp tomato paste • -2 tbsp vegan butter • -2 3/4 cups / 17 oz arborio rice • -2 tbsp nutritional yeast • Let the rice cook for around 15 mins and • transfer to a plate. put the plate in the fridge • to let the rice cool down. • In the meantime pat the eggplants dry and • transfer to a hot pan with • -2 tbsp olive oil • Cook until golden and crispy and then add • -1 can crushed tomatoes • -handful basil • -salt to taste • Cook for another 5 mins let it cool. • To make the arancini, take some rice and flatten it • Fill it with the eggplant and some • -vegan cheese • Cover with more rice and form a ball. • Cover the ball in the batter.
