#filletofsole #fishdish #fishmeal #lightmeal #savourydish #pancookedfish • #pesceinumido #Christmasevemeal #Goodfridaymeal • Pesce in umido- Filet of sole, a traditional simple one pan dish • A simple, easy and quick dish to prepare, perfect for those who enjoy doing • “la scarpetta” with a piece of bread to soak up all that savoury light sauce. • This recipe can easily be personalized based on your tastes. • We will be preparing you our base version, however; this delicious dish can be enriched by adding a few dried tomatoes, sliced roasted peppers, or some chopped fresh parsley. • It can be served as a light meal, or accompanied by some rice, mashed potatoes or over a bed of polenta. π • INGREDIENTS: 6-8 servings (depending on the sizes of the fillet) • 2 strips of firm fleshed fillet of sole (or fillets of your choice: bass, tilapia, cod/merluzzo) • 3-4 garlic cloves π§ • 1 cup of white wine • 1/4 cup of olive oil • 1/4 stick of butter π§ • 4 cups of cubed tomatoes π • One handful of Kalamata olives • One handful of purple olives (or other olives of your choice) • One handful of capers • Salt and black pepper to taste • DIRECTIONS: • 1) In a deep large frying pan, over medium heat, pour in the olive oil, then add the butter. Add the garlic cloves. Sauté for about one minute, just enough for the garlic to release it’s flavour and fragrant. • 2) Add the tomatoes and cover with lid for 1-2 minutes. • 3) In the meantime, pat dry the fillets with paper towels and pass your fingers over the centre of the fillets to ensure that there are no bones. Then cut the fillets in serving size pieces. • 4) Nestle the fish pieces into the pan. Add the white wine, olives, capers, salt and black pepper. Scoop some of the tomatoes along with it’s juices over the fish. Cover with the lid and let cook for 5-6 minutes. • 5) Turn over the pieces of fish, remove the garlic cloves and mash them with a fork. Add them back into the pan. At this point, taste the sauce and adjust seasoning if needed.
