Before combo-pellets, endless piles of red oak sawdust at different stages of aging filled the Cap N Stem HQ. Sifting out wood-chips was a fulltime job, weighing, hydrating, testing, shuttling dozens of barrels back and forth to fill twin ribbon mixers had us at a strangle-hold in terms of production numbers and time. Combining two or more ingredients and then creating a pellet from that mix that was shelf stable and yielded high quality mushrooms was a great concept but needed to be thoroughly thought out and approached. We worked with a couple local mills to trial out the concept and at the same time Brad Kuhns of Top Shelf was gunning in that direction at lightning speed. Working together we made the transition to the sole use of combo-pellets. What if the mill gets the mix ratio wrong? The hydration is off? The supply runs dry? The species of hardwood has to change on a dime? All of these questions and more plagued us for the first year. As time went on and small kinks got worked out, the combo-pellet train we have come to rely on has held up and the interest in making them more available has grown. Companies have popped up making their own versions, some simply combining two different pellets in the same bag or super sack, others using a poor choice of ingredients or increasing the moisture content of the pellet too much. There is some secrecy in the combo-pellet world, even in the terminology surrounding the different pellet products available. Comparisons between what’s out there hasn't happened…until now.
