Of course, feel free to use rum, amaretto, or juice if that's more your style. Just be sure to rinse the raisins thoroughly to prevent the dough from darkening π. • To make the Stollen extra moist, try soaking the almonds, candied orange and lemon along with the raisins π₯°. • After baking, brush the Stollen with melted butter and sprinkle it with sugar while it's still warm. Allow to cool completely before dusting with icing sugar. For a white surface, sprinkle with icing sugar again before serving. • For the best flavor, wrap the Stollen in an airtight container and let it rest for at least 1-7 days. It is best to soak the raisins the day before. But at least 1-2 hours before making the dough. • For the pre-dough: • πΈ7 tbsp (100 ml) of lukewarm milk • πΈ4 tsp dry yeast • πΈ1 tbsp of a total of ½ cup (100 gr) of sugar • πΈ6 tbsp of a total of 4 ¼ cups (500 g) of all-purpose flour. Gradually add 1 - 2 tbsp of flour, if the dough is sticky. • Mix the Ingredients and let rise in a warm place for about 30 minutes. • For the Stollen Dough: • πΈthe remaining flour (4 ¼ cups (500 gr) minus 6 tbsp for the pre-dough) • πΈthe remaining sugar (½ cup (100 gr) minus 1 tbsp for the pre-dough) • πΈ18 tbsp (250 gr) butter • πΈ2 tsp of vanilla sugar or 1 tsp of vanilla extract • πΈ½ cup (50 g) ground almonds • πΈ½ tsp salt • πΈthe pre-dough • πΈzest of 1 lemon • πΈzest of 1 orange • πΈ1 tsp Stollen Spice (alternative: homemade gingerbread spice: • Lebkuchengewürz selbst gemacht | Stol... but without ginger) • πΈ¾ cup (85 gr) of chopped Almonds • πΈ7 tbsp (75 gr) Candied Orange Peel • πΈ5 tbsp (50 gr) Candied Citrus Peel • For the decoration: • 4 tbsp (50 gr) melted butter • 3 - 4 tbsp of sugar • 5 - 6 tbsp Icing Sugar • Let the Dough rise in a warm place for about 1 hour.
