Olive Oil and Creamy Salmon Soup 😋🤎 • “This is one of my favorite soups during these months.” • Ingredients: • 2 carrots • 1 red onion • 1 leek • 2 tbsp olive oil • 1 tbsp butter • 1-2 potatoes • 250-300g salmon • A little more than 1/2 cup of milk • Salt, black pepper, and Vegeta seasoning • 1/2 lemon • Freshly chopped parsley or dill (for garnish) • Instructions: • 1. Chop the carrots, onion, and leek. Heat olive oil and butter in a pot, then add the vegetables. Add the leek last. • 2. Stir and sauté the vegetables until they soften, then add hot water. • 3. Add salt, black pepper, and Vegeta seasoning. Vegeta will add a unique aroma to the soup. • 4. Add the potatoes. Boil until the potatoes are tender (be careful, as the potatoes cook faster than the salmon). • 5. Cut the salmon into cubes, season with some salmon seasoning, and add it to the soup. Stir lovingly. • 6. Add the milk (a little more than half a cup) to the soup. Make sure to add the milk last to prevent it from curdling. Cook for 10-15 more minutes. • 7.
