Stuffed Patty Pan Squash

It's the middle of summer and the garden is bearing fruit and one of these is patty pan squash. But, what do you do with this odd looking squash. It kind of looks like a flying saucer or a crown. I've seen recipes for roasting the little variety of these but what do you do with the larger ones. Stuff it I say. In this video I made a simple blend of hamburger, rice, homemade salsa and an egg for a binder. No amounts listed as this was done on the fly. I imagine a vegetarian version could be made using sticky rice and beans.
