Canning Strawberries On Top Preserves Recipe

This is a simple, beautiful preserve that goes on top of just about anything you can think of! For more information click the show more box! • Recipe • 5 cups halved hulled strawberries • 6 1/4 cups granulated sugar • 2 tsp finely grated lemon zest • 4 Tbsp lemon juice, divided • 1 cup + 2 Tbsp water, divided • 1 package regular powdered fruit pectin • 1/2 tsp butter ( optional ) • In a large bowl combine strawberries, sugar, lemon zest, 2 Tbsp of the lemon juice and 2 Tbsp of the water. Stir well. Let stand at room temperature for 3 hours. • Bring strawberry mixture to a boil over high heat, stirring for 2 minutes, remove from heat. • In another pot combine remaining 1 cup water and remaining 2 Tbsp lemon juice. Whisk in pectin until dissolved. Bring to a boil over high heat, stirring constantly. Boil hard. When it's • at a hard boil set a timer for 1 minute stirring constantly.
