Make the Wraps: • • In a bowl, mix plain flour, semolina flour, warm water, sesame oil, and a pinch of salt. • • Knead the dough for about 5 minutes, then wrap it in clingfilm and let it rest for 30 minutes. • 2. Prepare the Fillings: • • In a mixing bowl, combine chopped pork leg meat, chopped king prawns, smoked paprika, minced garlic, minced ginger, grated Parmesan cheese, salt flakes, and black pepper. Mix well and set aside. • 3. Roll and Cut the Wraps: • • Divide the wrap dough into two portions. • • Roll out each portion with a rolling pin until it's 1-2mm thin. • • Use a pastry cutter to cut out circular shapes from the dough. Re-roll any scraps and repeat the process. • 4. Assemble the Gyoza: • • Place a small spoonful of the filling in the center of each dough circle. • • Fold the dough in half to form a half-moon shape and press the edges to seal. You can crimp the edges decoratively if you like. • 5. Cook the Gyoza: • • Heat a frying pan with some rapeseed oil over medium heat. • • Fry the gyoza on one side until golden brown. • • Pour a bit of water into the pan, then cover with a lid and cook for about 8 minutes until the water evaporates and the gyoza are cooked through. • • Set the cooked gyoza aside to rest for a few minutes. • 6. Prepare the Dipping Sauce: • • Mix light soy sauce, chili flakes, and rice vinegar in a small bowl to create the dipping sauce. • 7. Serve: • • Arrange the cooked gyoza on a serving plate. • Serve the dipping sauce alongside the gyoza. • ➡️I would love to share my latest recipes with you!
