Coddled Egg With Mashed Potatoes Recipe Shorts

#Shorts #coddledegg • Boil a peeled potato for around 30 minutes until it is soft enough to mash. • Transfer to a bowl and add 1 tbsp of salted butter. Use the back of a fork to quickly mash it with the butter melting into the potatoes. Season with black pepper when it is creamy smooth. • In a glass jar that can withstand heat, layer the bottom with the mashed potatoes. Crack an egg on top of the potatoes. • Season with a pinch of salt and black pepper. Sprinkle some grated cheese, preferably parmigiano reggiano. Close the lid. • In a pot of simmering water, place the jars into the water. Make sure the water is at least 2 thirds up the jar. Simmer for exactly 7 minutes and make sure the water is not boiling too hard. • After 7 minutes, the egg whites will have set whilst the yolk is still creamy and oozy. • Remove from the simmering water and sprinkle green scallion on top. Serve with toast which you can use it to dip into the egg and potato. • Altogether, the ingredients should cost just over a dollar. The very horribly named new egg place will charge you over 10 times for something that’s easily and cheaply made at home.
