Preheat the oven to 350F (175 C). Line a baking pan with parchment paper. • 2. Toss chopped pecans, coconut and agave syrup to the pan, fry over medium high heat until golden brown in color and dry. Stir occasionally. Set aside. • 3. In a mixing bowl mash banana. Add nut butter, agave syrup, salt and vanilla. Mix well. • 4. Add oats, grounded flax seeds, cinnamon and baking powder. Stir until combined into a sticky dough. • 5. Fold in pecan-coconut mixture. • 6. Roll into balls (about 1,5 tbsp of dough per cookie). Place on a baking sheet lined with parchment paper and press to flatten slightly. Top with pecans (optional). • 7. Bake for 15 minutes at 350F (175) or until golden brown in color. • 8. Cool completely on the baking pan. • 9.
