However, in 1786, the most famous Scottish poet Robert Burns wrote his poem historic address to a Haggis, expressing her love of the dish. This brought the Haggis recognition, and a public association with Scotland. Robert Burns was a Scottish nationalist, and was very patriotic. Such was the love of the poet after his death, Burns Night is celebrated every 25 January - it was his birthday. His friends sit and recite his poems, and when they reached the address to a Haggis steam to be held in the room for them to eat. These days Burns Night is still celebrated, and Scots around the world celebrate the great man, and both enjoyed Haggis eaten. Because of Burns, Haggis is widely regarded as the national dish of Scotland. But while he is revered north of the border, also there may be a reluctance to try. Haggis is traditionally made with the peak of a sheep, chopped and stuffed into his stomach with a mixture of oats, onion, herbs and spices, then boiled. While this may not seem very attractive, complex flavors are a delight, a kind of intense lamb flavor with hints of herbs. Indeed, the content and quality of the meat ingredients are superior to those found in many sausages.
