Chiles Rellenos Enchiladas

What an easy way to have the flavor of a chile relleno without all the fuss making them . Don’t get me wrong , I love chiles rellenos but it is a process to assemble . This is so delicious . And quick to put together . • Ingredients : • 3 poblano peppers ( broil until completely charred all over ) • 1 1/2 cups of shredded cheese ( I used Oaxaca . ) *reserve 1/2 cup for topping • Corn tortillas • 1 cup tomato sauce • 1 1/2 cups chicken broth • 3 tablespoons chili powder ( I like Gebhardt brand ) • 1/2 teaspoon smoked paprika • 1/2 teaspoon garlic powder • 1/2 teaspoon onion powder • 1/2 teaspoon ground cumin • 1 teaspoon sugar • 1/4 teaspoon salt ( I use chicken bouillon ) • Bake at 350 degrees uncovered for about 15 mins or until cheese melts • Serve as is or with a side of rice beans • My picadillo recipe 👇🏼 • • MY PICADILLO RECIPE • Follow me on IG - @cooking_with_trish • FB - cooking with trish • 😊
