Teriyaki salmon poke bowl recipe • Servings: 4 • Ingredients: • Teriyaki Salmon • 700g salmon fillets, skin on, descaled • 4tbsp soy sauce • 2tbsp brown sugar • 1tsp sesame oil • 2 garlic cloves, minced • 2tsp ginger, minced • 1tsp cornstarch • 2tsp water • 1-2tbsp oil • For the Poke Bowl*(see notes) • 4 servings of cooked rice • ~100g edamme beans, frozen • A bit of radish, julienned • 1 avocado, sliced • 1 cucumber, julienned • 1 carrot, julienned • Method • To make the Teriyaki Salmon • 1. Descale the salmon skin if not done already. Check for and remove any fish bones. Rinse the salmon. • 2. Combine soy sauce, brown sugar, sesame oil, minced garlic cloves, and ginger in a small bowl. • 3. Marinate the salmon in the marinade for about 30 minutes. • 4. Heat up a pan over medium high heat. Add some oil. Lay the fish down on the pan and cook until done. • 5. While the salmon is cooking, add the marinade to a saucepan. Make the cornstarch slurry. Add to the marinade, give it a stir, bring to simmer over low heat, and let the sauce thicken. • To assemble • 1. Add edamme beans to a pot of water. Bring to boil. Cook for about 3 minutes. • 2. Prepare the vegetables. • 3. Add cooked rice to bowl. Top with salmon and vegetables. Add some of the teriyaki sauce onto the salmon. Sprinkle some roasted sesame seeds (optional). • 4. Serve and enjoy! • • Notes: • *To be honest, the selection of vegetables used really depends on personal preference and what you can get your hands on.
