IBERICO CABECERO ROAST – Smoked Pork : This might just be the best smoked pork roast I ever had.. give it a try! • Find out more about the kamado Joe - http://www.kamadojoe.com/ • This is where I order my meat - http://www.beefensteak.nl/en/ • These are my knives - http://www.wuesthof.com/germany/produ... • Total cooking time: 3 hours 40 minutes • Preparation time 0 hours 40 minutes • Cooking time 3 hours 00 minutes • Suggested tools: • Butchers twine • Ingredients: • Iberico Cabecero – 1 cut • Parsley – 4 twigs • Thyme – 6 twigs • Oregano – 3 twigs • Garlic cloves – 4 cloves • Salt – a healthy dose • Pepper – same as salt • Fruity vinegar – 4 tablespoons • BBQ Rub – ¼ cup • How To: • 03h40m - Start your barbecue and set it to smoke at 125 Celsius 250 Fahrenheit • 03h30m – Butterfly the iberico cabecero, chop the fresh ingredients fine. Stuff the cabecero with thyme, parsley, oregano, salt pepper, garlic and vinegar. Tie up the cabecero.
