(30 ml) fresh lime juice • 1/2 oz. (15 ml) semi-rich simple syrup (1.5:1, sugar:water) • 2-3 oz. (15 ml) fresh lime juice • 1/4 oz. (30 ml) fresh lemon juice • 1 oz. (30 ml) rich earl grey syrup** • 3/4 oz. (22.5 ml) aquafaba (chickpea or white bean water) • 2-3 oz. (60-90 ml) Fever Tree Premium Indian Tonic Water • Lemon zest for garnish • This is great with a sprig of thyme or lavender too! - if you have it (I did not) • **RICH EARL GREY SYRUP • 200g strong earl grey tea • 400g granulated sugar • Steep 4-6 earl grey tea bags in 200g (~1 cup) boiling water for 10-15 minutes. Remove tea bags and add sugar. Over low heat, stir until sugar is dissolved (don’t boil!).
