This dish is a perfect blend of flavors and textures, making it great for a light meal or a delightful side. • Ingredients: • For the filling: • 4 medium potatoes • 1/2 cup feta cheese, crumbled • 1/2 cup shredded mozzarella cheese • 1/4 cup olive oil • 1/4 cup fresh parsley, chopped • 1/4 cup green onions, chopped • Salt and pepper to taste • For seasoning: • 1/2 tsp garlic powder • 1/2 tsp paprika • 1/4 tsp cumin • Instructions: • Cook the potatoes – Boil the potatoes in salted water until tender (about 20 minutes). Drain and let them cool slightly. • Prepare the filling – In a large bowl, combine the feta cheese, mozzarella cheese, olive oil, parsley, green onions, garlic powder, paprika, cumin, salt, and pepper. • Stuff the potatoes – Cut the top off each potato and scoop out some of the flesh with a spoon, leaving a thick wall to hold the shape.
