Lefse, or kling, is the name of various types of soft Norwegian flat bread baked on a large flat griddle. Lefse is part of the traditional food culture in Norway and other parts of Scandinavia. • Recipes and names vary from area to area, and can appear as sweet or savory. The example in this video is traditional for the eastern part of Norway, among other areas, and are made from potatoes and wheat flour. Lefse is often eaten in rolls or in layers with, for example, sylte (spiced pork), cheese or sugar and cinnamon. • Lefse is also common in parts of the United States. The tradition of making lefse was brought over by Norwegian immigrants, and can be found in states like Minnesota, North Dakota, South Dakota, Iowa, Wisconsin, Oregon, Alaska, and Washington.
