Put water on a terracotta dish, put the head and the tail of the fish and cook at low heat (a terracotta dish spreads better the heat). • 01:20 Cut the ginger, the turmeric root and the galangal roughly, and put them in the water. Add the coriander, the white peppercorns, the juniper berries, the bay leaf and sake, and let cook at low heat. • 02:38 Put the slices of fish in the soup. Add the spring onion and the lemon leaves. Let cook during about 30 min. • 03:28 Add salt, sugar, pepper and the mushrooms. Add the soaked Shiitake. • 04:37 Put the soaked Seaweed in the soup. Add salt and sake. Remove the scum and serve with chives.
