Vegetarian pasta bake with spinach and rich cheese sauce is easy to make and delicious. It is perfect for lunch or dinner. • Ingredients: (about 4 portions) • 30 g (2 tbsp) unsalted butter • 2 garlic cloves • 3 tbsp all-purpose flour • 400 ml ( 1.7 cups; 13.5 oz) milk (2% or whole fat) • 1 tsp mustard • ⅓ tsp ground nutmeg • Salt, pepper • 300 g ( 3 cups) freshly shredded cheese (I use Cheddar and Emmental) • 200 g (2 cups or 7.1 oz) pasta • 250 g ( 1 cup) spinach (defrosted) • For best results, measure ingredients with a scale. All recipes are made with weighed ingredients using grams.
