Scallops with sauce vierge recipe Five Minute Food

Xanthe Clay shows how to prepare scallops in sauce vierge from fridge to plate in just five minutes. • Try to find hand dived scallops in the shell for this, and ask the fishmonger to prepare them for you. Loose scallops are often dredged, which does long term damage to the sea bed. They are expensive, so this is a treat, but worth it for an occasional blow out. All you need is some good bread to go with it. • 6-10 scallops with their roe, depending on the size • 1 tsp butter • 5 tbsp extra virgin olive oil, plus 1 tsp • 1shallot • 2 really ripe tomatoes (plum ones are best) • 2 sprigs of basil • 1 small clove of garlic • 1 lemon • Heat a large frying pan with the butter and 1tsp oil. • Pat the scallops dry on a piece of kitchen paper and prick the roes with the point of a knife to stop them bursting, then add to the pan. Cook for 1 minute on each side, until just coloured. • Meanwhile, peel and chop the shallot (use a mini processor if thats quicker for you, but dont blend it to a puree). • Chop the tomato into pea sized pieces, and shred the basil, saving the little leaves at the top for garnish. Put the tomato, shallot and basil in a small pan with the olive oil, crush in the garlic and warm gently. Taste and season with salt and pepper. Squeeze in a little lemon juice if necessary. • Scoop the scallops on to plates and add the sauce to the scallop pan.
