Yamas! This week, I am making a Greek dish called Pastitsio (pronounced pas-tee-tchio). It is considered to be a Greek lasagna. It looks as though, as long as it is a solid pasta to hold its shape, you should be fine to use any pasta. • Instead of wine, you could use beef or vegetable stock. • Instead of beef, you could use a mix of ground beef and pork. Would also be great with ground lamb or, if you wanted to make it vegetarian, you could use a plant based meat alternative. • When incorporating eggs to a hot liquid, I always temper the eggs prior to adding. I mix in a bit of the hot liquid into the egg (whole, yolk or white). I don’t want scrambled eggs. • Instead of using a whisk to add cheese to the sauce, I recommend using a spatula or spoon (wood or other). I learned the hard way, the melted cheese gets caught in the whisk strands and makes a lumpy mess. • The recipe is easy to follow (link below), but was unclear how much clove to add.
