KETO – coconut almond cake • • • Ingredients: • • · 2/3rd cup desiccated coconut (https://amzn.to/2YeyMI2) • · 1+2/3rd cup almond flour (https://amzn.to/2Y0QmE0) • · 3/4th cup swerve (or any other sweetener) (https://amzn.to/2Y6df9v) • · 200g(13 tbsp) unsalted butter, melted and cooled • · 4 medium eggs • · 1 tsp vanilla extract • · 1 tsp almond extract (https://amzn.to/2Y4W8ow) • · A pinch of salt • · About 2-3 tbsp flaked almonds. (https://amzn.to/2Ym8lnL) • • Method: • • 1. Preheat the oven to 180C/350F. • 2. Grease and line a 8 inch round pan • 3. Beat eggs until frothy and add the vanilla and almond extract. Mix the ingredients and set aside this egg mixture. • 4. In another bowl mix the desiccated coconut, almond flour, swerve and salt until they are well combined and set aside this dry ingredient mixture. • 5. Now take the egg mixture and to this, add in the dry ingredients and fold until well combined. • 6. Add the melted butter and fold in again until combined. • 7. Pour the mixture into the greased lined cake pan and spread evenly. • 8. Spread the almond flakes evenly over the surface of the cake batter. • 9. bake in the oven for 45 minutes, then test to see if the top is springy when pressed. If so take it out of the oven, if not then bake for a few minutes more and test again. • 10. Once baked, remove pan from the oven and let cool for 20-30 minutes before placing on a wire rack and letting it cool completely for about 2-3 hours.
