Trying Celebrity Chef Signature Dishes: Jean-Georges Vongerichten “Molten Chocolate Cake • Recipe below adapted from: https://www.foodandwine.com/recipes/m... • Ingredients • 1/2 cup (4oz) unsalted butter • 2 tbsp All-Purpose Flour • 6oz bittersweet chocolate (70% dark) • 2 eggs • 2 egg yolks • 1/4 cup sugar • 1/4 tsp salt • Steps • preheat oven to 450 F • butter and lightly flour 6oz ramekins and tap out excess flour, set on baking sheet • fill a small pot with a bit of water (1 inch deep) and bring to simmer • place chocolate and butter in heat-proof mixing bowl and place the bowl over the heated water pot • stir chocolate and butter until melted, then remove from heat and set aside • combine eggs, yolks, sugar and salt in a mixing bowl and vigorously whisk until thickened and pale (2 mins) • combine melted chocolate with egg mixture and add flour, mix just until no streaks remain. Don’t over mix! • add batter to ramekins, leaving room at top • bake until tops of cakes are set, but center still feels jiggly to touch (8-12 mins) • remove from oven and let cool for 1-2 mins, carefully turn over and let stand for 30 seconds before lifting ramekin
