We eat this dish very often in summer season. It is very easy to prepare, tastes so good and very light. Hope you give it a try! • To stay tuned upcoming videos SUBSCRIBE here: •    / elvancatarifler   • You can support my Channel with Patreon: •   / elvancatarifler   • • INGREDIENTS (serves 2-3) • 3 zucchinis (750 gr./1.5 pounds) • 2 carrots (250 gr./0.5 pounds) • 1 onion (cut into cubes) • 3 tbsp uncooked rice • 1-2 tbsp fresh dill (chopped) • 1 clove garlic • Salt White pepper • A pinch of granulated sugar • Olive oil • DIRECTIONS • Peel the carrots, rinse. • Then cut in half moons, by slicing lengthwise in half. • Heat 2-3 tbsp olive oil in a large pan, over medium low heat. • Add onion, sprinkle a pinch of salt and pepper, mix. • Add carrots, sprinkle a pinch of sugar. • Saute for about 7-8 minutes, or until onion is tender, stirring occasionally. • Meanwhile, peel the zucchinis and cut lengthwise in half. • Scoop the seeds, using a spoon. • Cut into chunks, make sure to cut thicker than carrots. • Add zucchinis into the pan, cover with hot water. • Bring to a boil, over medium high heat. • Sprinkle 1/2 tsp salt and a pinch of pepper, mix. • Add rice, reduce heat to medium low. • Add garlic. • Cover and simmer for 15 minutes. • Check carrots for doneness and adjust the seasoning. • Cook some more, if needed. • If desired, you can turn this dish easily into a creamy soup, using an immersion blender. • You can also cook for an additional 2-3 minutes to thicken the dish, uncovered, over medium high heat. • Turn off the heat, remove and discard garlic. • Add chopped fresh dill, mix. • Let cool for at least 5-10 minutes. • Scoop into a serving dish. • You can serve it hot, warm, at room temp or even cold, whatever your heart desires! • It tastes so amazing and light! • If you enjoyed the video please subscribe to my channel, leave a like and share your comments below for more recipes.
