Since black lentils are small, you don't need to mash them completely — leaving some whole adds a nice texture to the meatballs while still helping them hold together. • • Add oat flour, garlic powder, parsley, tomato sauce, cumin, smoked paprika, nutritional yeast (if using), salt, and pepper. Mix until well combined. • • Shape the mixture into small balls (about 1 inch in diameter) and set aside. • • Heat a non-stick skillet over medium heat and add a bit of oil. Fry the meatballs in batches, turning occasionally, until they are golden brown on all sides, about 6-8 min per batch. Transfer cooked meatballs to a plate and set aside. • Prepare Sauce: • • In the same skillet sauté the chopped onion and celery until softened, about 5 min. • • Add the canned tomatoes, dried basil, dried oregano, salt, and pepper. Stir and let simmer for 10 min to allow flavors to meld. • Simmer Meatballs: • • Add the meatballs to the sauce and let them simmer in the sauce for 10 min to absorb the flavors. • Serve: • • Serve the meatballs hot with your choice of sides or pasta.
