🏴 GIN PICKLED ONIONS 🏴 • I pickle red onions a lot. I love them on anything from toasties to tacos, cheese boards to burgers…you will often find a jar in my fridge. SO easy to make and better than shop bought, try this little twist using Scottish gin. I have added more dry spices that you might find in gin, like coriander and juniper, but also fresh herbs and these all contribute to a superior pickle! • 1 tsp junipers berries • 1 tsp coriander seeds • 1 tsp allspice berries • 1 tsp mixed peppercorns • 100ml Scottish gin • 250ml white wine vinegar • 150ml water • 1 tsp salt (I used Olssons gin salt) • 70g sugar • 1 bay leaf • 2 sprigs of fresh thyme • 2 good pieces of lemon rind • 1 large garlic clove • 4 red onions • Put your dry spices into a pan and dry roast them for a few minutes till fragrant. Add your gin to the hot pan, the alcohol will boil off instantly, then add vinegar, water, sugar, salt, herbs, lemon rind and garlic. Leave on a low heat till sugar is dissolved then turn heat off and allow to infuse for an hour. Finely slice your onions. A mandolin is ideal to get them super thin, but a knife will do the job. Stuff them into two 500ml jars. Strain the ‘bits’ out then pour the hot liquid on top of the onions. Leave till at room temperature then refrigerate. You can eat these within a few hours but best left a couple of days till the liquid turns pink!
