(half of a medium sized cauliflower) • Potatoes - cubed, 3 cups; • Onions - Finely chopped, 3 cups; • Tomatoes - pureed/crushed/finely chopped, 1 cup; • Ginger paste - half tbsp; • Garlic paste - 1 tbsp; • Whole spices - 1 green cardamon, 5 cloves, 1 star anise, 1 inch stick of cinnamon, half tsp fennel seeds (saunf), 1 tsp cumin seeds (jeera); • Ground spices - 1 tsp each of turmeric powder, red chilli powder, corriander powder and garam masala powder, and half tsp cumin powder; • Coconut milk (optional) - half a cup (may be substituted with heavy cream/cashew paste); • Coriander leaves/cilantro to garnish; • Salt to taste; • Cooking Oil - 3 to 4 tbsp; • Water - half a cup; • Salt to taste. • • Ingredients
