学会做基础的蛋糕卷,就可以变化出各种口味各种造型。 • 🥣 材料: • 4个鸡蛋, • 玉米油 40克,牛奶 40克, • 砂糖 40克, • 低筋面粉 45克,玉米淀粉 5克, • 柠檬汁 3-4克。 • 🥣 Ingredients: • 4 eggs, • Corn oil 40g, Milk 40g, • Caster sugar 40g, • Low protein flour 45g, Cornstarch 5g, • Lemon Juice 3-4g. • 📝做法 Methods: • 1. 分离蛋清和蛋黄。蛋黄先放在一边备用,蛋清放去冰箱冷冻。 • Separate the egg white and yolk. Set the yolks aside and place the egg whites in the freezer. • 2. 另取一盆,将牛奶、玉米油和20克糖,用蛋抽充分的搅拌均匀。 • Mix corn oil, milk, and 20 grams of sugar with egg whisk. • 3. 筛入低筋面粉,用蛋抽,好像画“Z”字形的手法,把面粉和液体充分的混合拌匀(不理解的请点击链接看视频),不要画圈圈搅拌。然后加入蛋黄,继续用画“Z”字形的手法把它们混合拌匀。 • Sift in low protein flour. Then add egg yolks and continue to mix them in a Z way. • 4. 从冷冻室里取出蛋清,加入柠檬汁和剩余的20克糖,用电动打蛋器低速打发至接近湿性发泡,加入玉米淀粉,继续低速打至提起打蛋头,蛋白霜呈一个小弯钩的中性发泡的状态。 • Take out the egg whites from the freezer, pour in lemon juice and 20 grams of sugar and beat with an electric whisk on low speed, Add cornstarch when the meringue before soft peak form and continue beating on a low speed, whip until firm peak (that is, when you lift the whisk, the tip of the peak is folds over slightly). • 5. 先拿差不多1/3的蛋白霜加入蛋黄糊中,用从底部捞起面糊再从中间压下去的方式拌匀,然后再把拌匀的蛋黄糊倒回剩余的蛋白霜内,用同样的方式拌匀。 • Add about 1/3 of the meringue to the yolk batter, toss with the egg whisk. Then pour them back into the leftover meringue, mix thoroughly (Do not stir in circles). • 6. 距离模具大概2、30cm的高度处把面糊倒进铺了油布的模具中,整平表面,然后在桌面上敲几下震出大气泡,就快速送进预热好的烤箱,155℃,中层,烤30分钟。 • Pour the batter from high into a baking tray lined with oil mat, let them spread out evenly. Tap few times to remove large bubbles inside the batter, bake in a preheated oven at 155°C for 30 minutes. • 7. 烤好以后拿出在桌面震两下,拎着油布小心的把它们移出烤盘。 • Give it a big jolt when it comes out.
