Saltfish Buljol Recipe • Ingredients: • 1 lb boneless skinless saltfish • 1 tsp black pepper • 1 medium onion chopped finely • 1/2 sweet pepper chopped • 1 small carrot grated • 2 small tomatoes chopped • 2 sprigs chive chopped • 1/4 cup oil • Method: • 1. Bring a small pot of water to a boil, add saltfish and boil for about 15 mins (to remove excess salt) • 2. Strain saltfish • 3. Flake saltfish with a fork • 4. Add black pepper, chopped onions, grated carrot, chopped sweet pepper, chopped tomotoes, chives and oil and mix • Coconut Bake: • Ingredients: • 2 dried coconuts (I got 1 1/2 cups coconut milk) • 2 tbsp water • 4 cups all purpose flour • 2 1/2 tbsp brown sugar • 1 tsp salt • 2 tsp yeast • 2 tbsp butter • 2 tbsp shortening • Method: • 1. Grate coconuts finely • 2. Add 2 tbsp water to coconut and squeeze over strainer to collect coconut milk and save 2 cups of grated coconut • 3. Combine dry ingredients and rub in softened butter and shortening with fingers 4. Add grated coconut (2cups) and coconut milk (1 1/2 cups) • 5. Knead to form a soft smooth dough • 6. Cover and allow to rest for about 1/2 hr • 7. Divide dough and form into desired shape • 8. Place on greased tray, cover and rest for 15 mins. • 9. Prick top of dough with fork and brush with melted butter • 10. Bake in preheated oven at 350 °F for about 20 mins or until golden brown • • #coconutbake #saltfishbuljol #caribbeanfood #trinidad
