Finocchiona is one of the best pork products in Tuscany. This soft and fragrant salami, flavored with fennel seeds (finocchietto), is made from high-quality minced meat. • Meat • 1600 g pork shoulder butt 15 fat%) • 15% of fat = 282 g pork fat (pork bally) • Total : 1880 g • Ingredients • Salt (2.5% - 3% from the weight of the meat and fat)= 47 g • 42.3 g kosher salt • 4.7 g (3g/kg) cure #2, 6.25% • 8.5 g (0.45%) dextrose • 1.0 g (0.0005%)antioxidant • starter culture (follow manufacturer's instructions) I’ve used 1.5 g (0.0008%) MONDOSTART 2M • 65.5 g (3.5%) red wine • 10.0 g (0.55%) fennel 50% seed+ 50% ground) • 6.5 g (0.35%) ground black pepper • 8.5 g (0.45%) garlic • 60 ml Cold Water • Technology • 1. Keep everything super cold at all times. • 2. Work in a clean and sanitized environment • 3. Mix your meat, seasonings, and starter culture till it’s tacky • 4. Tightly stuff into a casing, prick out the air pockets (brush with Mold) • 5. Ferment • 6.
