Cockle Clam Salad • Most ingredients can be purchased on WEEE! https://sayweee.com/invite_friends/la... • Dipping Sauce • 3 1/2 T 3 Crab Fish Sauce • 3 T Rice Vinegar • 2 T Lemon Juice • 2 T Sugar • 1/2 C Water • 2 Chilies • 4 Cloves Garlic • Salad Ingredients • 1 Box Cockle Clam or Surf Clams • 7 OZ Picked Leeks (Cu Kieu) • 1/2 Red Onion • 1/2 C Green Onion • 1 C Cabbage • Mint, Rau Ram Rau Que • Fried Shallots (Hanh Phi) • Salt • Banh Da • Direction: • 1. Slice Cockle Clams in half. Add salt to clean the clams. Wash clams until it’s clean. • 2. Bring a pot of water to boil, add cockle clams and cook for 30 seconds. Remove the clams and submerge them in an ice bath to stop the clams from cooking. • 3. Thinly slice pickled leeks and preserved the liquid to pickled red onions. • 4. In a large bowl add pickled onion, pickled leeks, mint, rau ram, Thai basil, cabbage, fried shallots, clams dipping sauce. Mix well, transfer to a plate and garnish with more fried shallots. • 5.
