CRISPY Tofu Satay with a creamy and THICK peanut sauce

My Instagram: / veganleonora • My Facebook: / veganleonora • To make these you'll need: • For the tofu marinade: • 4 garlic cloves • small piece of ginger (about 2 cm) • a pinch of salt • 1tbsps brown sugar • 4tbsp kecap manis • 2tsp sambal oelek • 1tbsp soy sauce • 1tbsp lime juice • for the peanut sauce: • 2tbsp vegetable oil • 3 cloves garlic (grated) • 1tsp sambal oelek • 1/2tbsp brown sugar • 2tbsp kecap manis • 1tbsp soy sauce • 250gr peanut butter (smooth or chunky) • 250ml water • 350gr firm tofu • kecap manis for brushing the tofu • 8 (wooden) skewers • grill or grill pan • oil to oil grill pan • Start by breaking up the block of tofu with your hands into bite sized pieces. • I'm using a mortar and pestle to mix the marinade for the tofu to get more flavour out of the ingredients and cause it's easier :) But if you don't own one, either use a food processor to mix it or cut up the ingredients really small. I first mash up the garlic, ginger, the salt and the brown sugar for the marinade. Then I add the kecap manis, sambal oelek, soy sauce and the lime juice. Add this marinade to the tofu pieces, mix and then let this marinate for 1 hour. • If you're using wooden skewers you want to soak them in some cold water for 1 hour at this point. • In the meantime you can make the peanut sauce. Add the 2 tbsp of vegetable oil to a pan and heat this. Then add grated garlic, sambal oelek and the brown sugar. Saute this for 1-2 minutes until fragrant. Then add the kecap manis, the soy sauce and the peanut butter. Mix and cook this on low heat until the peanut butter darkens in colour (shouldn't take long!). Lastly add the water and mix until smooth. • When the tofu is done marinating, add a couple of pieces to each of the skewers.
