Nan’s Vegan Split Pea Soup Stove top or Instapot

This chunky split pea soup is loaded with vegetables and rich with flavor. You can double the recipe in an 8 quart Instapot or stove top pot. • As with all recipes, taste at the end an add what you like in terms of heat (I added some Harissa), savory flavor, or salt and pepper. • Before serving most soups, I add some chopped spinach just before serving, and let it wilt.
